Brenda Fawdon - Owner
Brenda has been a restaurateur and chef in Brisbane since her first restaurant, Primavera, opened in 1981. She is the visionary and driving force behind the Mondo concept, and she is a respected leader and voice championing the organic revolution in Australia. Brenda has an innate respect for real food and quality organic and biodynamic wines. She is a knowledgeable teacher and presents weekly at the Mondo Cooking School. Brenda makes a mouth-watering saffron seafood risotto prepared with Tin Can Bay king prawns and line-caught snapper.
Sonja Drexler - Owner
Sonja is a qualified interior designer and designed the stylish Mondo interiors and courtyard building. She has worked in the hospitality industry for 25 years, wearing many hats. Sonja is responsible for the financial and administrative systems that keep Mondo running efficiently, and for front-of-house management training. Sonja is currently designing and building her sustainable home at Springbrook Mountain. An ardent devotee of delicious food & wine, stinky cheese with a velvety red, and is very fond of tender organic lamb dishes - she'll have it medium-rare.
