At Mondo, we use the best organic, sustainable produce we are able to source.
Beef and lamb are supplied by David McDonald at The Organic Meat Company. The premium Santa Gertrudis beef cattle are able to wander freely to graze on uncontaminated mitchell buffed grass in central western QLD and are handled humanely at all times.
The seafood featured on the menu has been sourced from ecological, sustainable fisheries. The fish is wild line-caught in waters where the fish is plentiful. Sometimes we use fish which is considered a 'by-product' of other fishing. For example, tuna fishing often picks up other fish on the lines which we then like to utilise.
Flavour is, of course, paramount and the importance of this must be matched with the sustainability of the product.
Our fruit and vegetables are sourced from a variety of growers around the country, however, we favour local growers particularly South East Queensland, Darling Downs and the Sunshine Coast.
Stuart from Flour Power at Highgate Hill bakes the spelt, caramelised onion and rosemary sour dough loaves. The olive oil served with our bread is from The Olive Grove in McLaren Vale, South Australia and is a family reserve extra-virgin olive oil.
Due to seasonal availability, a product may be replaced with a non-organic product to maintain quality and consistency. If you have any questions regarding our produce, please ask.
