When selecting wines for our menu, all wines are tasted and examined before a decision is made for a listing. Only the wines that are best within their varietal group, category and class are chosen, regardless of cult status, exclusivity or potential greatness.

In addition to this, great effort has been made to source wines from vineyards using biodynamic and organic practices. Many of these wines are some of the great wines of the world.

We continually discover more and more high quality wine (especially white) available from Australia, Spain and Italy. We have secured and use a Vinoconserv wine preservation system at Mondo which enables us to pour these wines by the glass without oxidation. This system is also available at Mondo for sale.

We exclusively use Reidel crystalware from Austria which has been designed to complement each varietal and type of wine served.
